New Zealand Seafood Pasta
As presented on the Hallmark Channel's show, Home & Family.
1 cup Cloudy Bay Clams*
3 New Zealand green lipped mussels*
4 shrimp with head on
1/2 an onion diced
2 cloves of sliced garlic
1 cup fish stock
1 cup pappadelle pasta**
2 tbsp of pesto
1 cup of Riesling or other white wine
1 slice crusty sourdough bread**
Cook fresh pasta for seven minutes or dried pasta for thirteen minutes.
In separate pan, put onion, garlic, and shellfish together. Let cook for three minutes.
Pour cup of wine into pan. Let the alcohol burn off for a minute and then add one cup of fish stock and add 2 tbsp of pesto. Let it reduce for three minutes or until the liquid is reduced by two thirds.
Add cooked pasta to pan for two minutes.
Season with salt and pepper and serve with slice of sourdough bread. After plated, sprinkle parmesan cheese.
*Substitute for local seafood, if desired: Prince Edward Island Mussels, New England Clams
**Substitute gluten free pasta and bread if necessary.
